Yield 6 Pears

6 Pears

4 Orange Peels

1/2 Tsp of Whole Cloves

2 Cinnamon Sticks

1 Tsp of Vanilla Bean Paste/Extract

1/2 Cup of Red Fruits (currants, raspberries, cherries etc.)

1/2 Cup of Sugar

1/2 Cup of Freshly Squeezed Orange Juice

3 Cups of Red Wine

Method

Step 1

In a large saucepan, combine all ingredients over medium heat, bring to boil and then lower and simmer for 10 min.

Strain the fruits to remove any pulp.

Add cinnamon sticks and orange peel back to saucepan with strained liquid.

Step 2

Peel 6 Pears. Do not peel too early, as they will dicolour.

Add to the saucepan.

Place back over heat and add 1 tablespoon of unsalted butter, consistently basting and rotating pears.

Simmer over low heat for 25-30 min. If too much liquid reduces add small amounts of water.

Step 3

Transfer to a plate and allow pears to sit upright to cool.

Reduce sauce by half and then brush warm syrup over the pears.

Step 4

Garnish with additional sauce on plate with a scoop of vanilla ice cream and bits of streusel.
