Peanut Butter Oatmeal Cookies

Yield 18 Cookies

Mis en Place

1 ½ Cups Rolled Oats

½ Cup Flour

½ Tsp Baking Soda

A pinch of Salt

½ Tsp. Cinnamon

½ Cup Unsalted Butter

½ Cup Peanut Butter

1 Egg

½ Cup Brown Sugar

1.2 Cup Granulated Sugar

½ Tsp Vanilla Extract

Method

Step 1

Preheat oven to 350 degrees Celsius

Step 2

In a bowl whisk together dry ingredients, oats, flour, baking soda, cinnamon and salt.

Step 3

In a mixing bowl, cream softened butter in a bowl with a spatula, alternatively you can use a stand mixer with a paddle attachment.

Add peanut butter add sugars.

Step 4

Add vanilla extract and egg.

Step 5

Add dry ingredients in two additions. Stir until the dough just comes together.

*If you love raisins, nows a good time to toss in a handful.

Step 6

Line sheet pan(s) with parchment paper or silpat. Using an ice cream scoop portion 18 cookies. Roughly 40 grams each. Space cookies 2” apart and pat slightly with fork.

Step 7

Bake for 8-10 mins, until edges are golden and center is still chewy.

Cool on a wire rack or enjoy warm.
